. It is no mere chance that so much Eastern splendour has caused pretty eclectic mergers: Osaka was born in December 2002 in a small restaurant made of canes in a Peruvian beach. Three years later it reached Buenos Aires.

Osaka offers a blend between Peruvian and Japanese food. Four friends came up with the idea, four university classmates who nowadays carry out a successful project that is about to open its Chilean branch. Diego de la Puente together with Jann Vandoort and Daniel Delgado – chefs – and Diego Herrera – executive – are the faces at Osaka and summarize Osaka’s movement from one gastronomic culture to another.

‘Osaka has evolved. Initially, it was a Peruvian-Japanese blend. Then, we included some Thai cuisine, obviously blended with Peruvian food. After that, we went back to our roots, making the Peruvian predominant in our menu. We are constantly changing and investigating in order to include in our blend new cuisines from their basis, techniques and ingredients.’

The best dishes at Osaka are Tako Panka Miso – deep fried octopus with Peruvian Panca pepper and sweet Japanese miso – (u$s14), ceviche – made of fish, red onions, lemon juice and sweet potatoes glazed in passion fruit honey – (u$s12), and the spoons with Tai Ebi – prawns in leek and red curry sauce– (u$s11). Drink pisco macerated with coca leaves, purple corn, cape gooseberry, passion fruit or green tea (u$s10). Finish off with Pisco Sour ice-cream with bitter chocolate fudge and ginger (u$s7).

Osaka is special, unique in its kind, and nobody wants to miss this extreme fusion experience, therefore you must book your table in advance.
