Don’t expect that eating sushi in Buenos Aires will strictly follow the rules of traditional japanese sushi. In Occident, sushi is still being one of the trendiest food, but ブエノスアイレスで味わう寿司は、日本の伝統的なものとは一味違う。寿司は西洋では最も人気のある食の一つだが、ここではペルー料理などの地元で馴染みのある味と融合しているのだ。ラッキーなことに、日本の繊細さを残した西洋の寿司を味わえる信頼のおけるレストランがいくつかある。特にファブリック・スシはブエノスアイレスで一番おいしい寿司を食べられる場所。

probably because of its fusion with familiar tastes such as peruvian. Luckily there are a couple of faithful restaurants in which you can have the ‘occidental’ sushi but also japanese delicacies.

Fabric Sushi is one of the best places to eat sushi in Buenos Aires. They opened their first restaurant in 2008, on Paraguay Street, heart of Palermo Hollywood. The small, cozy and modern space started to make its own fame thanks to the tasteful sushi and the good prices. Nowadays they count with two more restaurants –in addition to the first one- in Vicente Lopez and Nordelta. They also have six deli and take away spots in different neighborhoods.

The menu has varied options, you might need a bit of advice in order to catch the real essence of Fabric. One option is to follow the Omakase menu – almost an spiritual journey to the world of flavor delicacy, consisting on 7 steps, all selected by the chef based – mainly – in the freshness of the ingredients. Another option is to follow my advice.

To start, Tiradito Frabric Nikkei –salmon and octopus with a delicious nikkei sauce with grated lemon and coriander-; The unbelievable Red Tuna Sashimi or the Ebi Furai Shrimp. Order a Ceviche –typical peruvian dish- is a good idea, I recommend the ‘ceviche mixto’ –white fish, salmon, red onion, pickles in tiger milk. Now, is Sushi time: Classic ones are on the menu but with different names, but the most interesting ones are under the label “especiales” (specials). From this list I point out ‘”Feelang”, a unique combination of shrimp, scallion and phila rolled in an amazing dough –‘masa tamago’- made out of egg!; “Inca”, breaded shrimp and avocado, rolled in white fish with tiger milk and a splash of togarashi (chilly pepper), with this one you will get a small hint about peruvian flavors. Another hit is ‘Chilli Roll’ –salmon, shrimp furai and phila rolled in avocado with fabric chilli jam sauce and crispy coconut-, ‘2 salmons’ –made out of spicy salmon and avocado on the inside and sealing salmon outside basted with nikkei sauce. ‘Smoked’, ‘Acevichado’ and ‘Fabric Roll’ are another not-to-miss specialties.

If you are wiling to try a new experience in Sushi, Fabric should definitely be on your must do list when visiting Buenos Aires.
