Le Musée—which means “museum” in French—is a French restaurant whose concept includes “food and art,” “Hokkaido’s rich nature,” and “minimalism.”

, Le Musée offers artistic culinary delights using Hokkaido’s bountiful local ingredients. Its uniqueness was acknowledged when the restaurant earned a star in Michelin’s special edition guide on Hokkaido.

The owner and head chef, Sapporo native Makoto Ishii, traveled to Europe at the age of 22. Ishii made his way across France, Italy, and Spain, finding inspiration in these countries’ food culture and art. In 2005, at the age of 31, he opened Le Musée. Renovating the restaurant in 2011, Le Musée has transformed into an edifice of modern art, three times its original size. The sophisticated interior of the new space includes an open dining area on the first floor, two private rooms and a special room with a kitchen in which Ishii himself cooks for guests on the second floor, and a rooftop terrace from which the beautiful seasonal views of Sapporo can be appreciated.

Starting in April of 2014, the restaurant initiated “Le Musée x Art Project” collaborating with contemporary artists in Hokkaido. In addition to holding special restaurant exhibitions that change according to the four seasons, special limited collaboration menus are also offered. Guests can enjoy dishes inspired by art while viewing the exhibitions. Carrying out conversations stimulated by delicious food and beautiful art, this unique opportunity will undoubtedly enrich patrons’ dining and art viewing experiences, as well as the diners themselves.

When it first opened, Le Musée used simple tableware, serving colorful cuisines that conveyed a western aesthetic. Today, the restaurant continues its search for more figurative forms of expression through natural landscapes, looking for beauty in Japanese sensibilities such as wabisabi. Each dish served here is inimitable and cannot be repeated, because they are based on Hokkaido’s nature and its fleeting beauty. The pure and constantly reincarnating original Hokkaido-French seasonal menu at Le Musée should be paired with a perfectly matched Hokkaido wine.
