Hofe is a modern French bistro, which re-opened in a new location in the Susukino district in March, 2011. Hofe’s new interior is chic but spare. The lighting and music are kept low and furnishings are understated rather than highlightedHofe（ホフ）は2011年3月に移転再オープンした新しいフランス料理店。ホフの新しいインテリアはシックでありながら、落ち着いた明るさと音楽が保たれており、非常に心地の良い空間だ。このシンプルな要素が人々がこの場所で料理を楽しむ十分な理由になる。
オーナー・シェフ佐藤純基氏によるメニューは、パテやフォワグラなどの古典的なフランス料理で構成され、全ての食材は地元で採れた新鮮なもので、デリケートな香りを楽しむことができる。
ホフでの料理はリッチでありながら、決して飽きさせない。ヌーヴェルキュイジーヌの伝統にのっとった佐藤シェフのシンプルな調理法は、食材本来の良さを最大限に引き出す。ハムやソーセージなどの肉製品や、札幌にあるアンシャンテブーランジェリーの素朴なパン達は、ヨーロッパで見つけるもののように美味しい。ホフはまた、手頃な価格でのグラスワインの提供も行っている。
ホフの４つのテーブル席と落ち着いたカウンター席に、予約が殺到する。しかしフレンドリーで素敵なスタッフに急かされることはなく、あなたが自由に迷いながら注文し、小さなプレートを味わい、グラスワインやクレームブリュレを好きなだけ時間をかけて楽しむことができる。

Chef Junki Sato’s menu draws heavily from French classics like pâté or foie gras. All of the dishes are prepared from locally grown, seasonal ingredients and are delicately flavored. On a recent visit, a tender, fresh, white asparagus and shrimp salad perfectly articulated the arrival of Spring in Hokkaido.
A meal at Hofe is rich but not overwhelming. In the French nouvelle tradition, Sato’s simple preparations highlight the quality of his ingredients, letting them speak for themselves. Both the charcuterie and rustic bread, from Sapporo’s excellent Enchánte Boulangerie, are as good as any you would find in Europe. Hofe also offers a well-priced selection of wines by the glass.
With just Four tables and a handful of spaces at the bar counter, a seat at Hofe is coveted. And yet unrushed by the friendly staff, you are free to order slowly, savor the small plates, and linger over your glass of wine or a crème brûlée for as long as you like.
