Fukuoka is one of the famous gourmet cities including Tonkotsu Ramen (noodle with pork broth) which is nationally well-known for Ippudo's Hakata ramen as well as Nagahama, Motsunabe (offal meat hot pot), seafood from Genkai Sea, dumplings, Spicy Mentaiko (marinated roe of pollock), etc. Including Nakasu, Hakata and Tenjin, there are many open-air stalls where you can enjoy various food in a relaxed atmosphere until late night. For the beginners, try places where have price lists. In Nakasu area, there are nice places in a great location like Mitsubachi and other refined retreat-like bars. Cannot be missed for your appetite and night life.
