従来の蕎麦屋のイメージを大きく覆す、ニューウェーブなそば処「港屋」。小さな入り口。建物はグレーに染まり、わずかに中が窺い知れる覗き窓が、道に平行してデザインされているMinatoya is a standing Soba restaurant with modern architectural appearance. It is very unusual because most of Soba restaurants prefer traditional Japanese architecture。一見、バーかダイニングレストランのような店構えに、毎日、個性的な味わいの蕎麦を求めて長い列ができる。

. Soba is a thin noodle make from buckwheat flour. Although its appearance is unusual, people know how good of Soba it serves, so there is a waiting line in front every day.

Mr. Kikuchi, an owner loves classic music especially Chopin, so he only plays classics in the restaurant. Five cooks divide tasks to serve for endless customers a delicious Soba. Customers are waiting in the line by counter patiently to get their orders. After getting orders, they move to big black marble table to eat. Toppings are on the table and free.

The soup makes Minatoya so popular and special. Its recipe is of course top secret. The most popular menu is hot chicken Soba. (850 yen) The soup is based on spicy oil and coarsely ground black pepper. There are hole chicken in the bottom of bowl. You can also put row egg in it to dilute with soup. The restaurant closes whenever Soba sold out.

Kikuchi says, “Soba is just a fast food. I do not think any thing difficult about Saba. I just want to make something original.” Minatoya serves simple, but original, unique and delicious Saba.
