Share with us your inspiration for FoodBar DaDa.

My inspiration for FoodBar DaDa comes from our customers and my insatiable need to satisfy their epicurean desires. I spend a fair amount of my time interacting and listening to our customers, finding out what they enjoy and I find ways to fulfil their requests.

Why Singapore? What was your impression before coming over and your impression after?

Why not … I had an offer from a classic “brasserie” in Paris and at the same time, another from a huge hotel in London, but the offer I received from Singapore was really different to the others. The concept of Foodbar Dada, the place and location, the weather and many other factors, I thought it was a great opportunity and an opportunity as such doesn’t happen often.

Before I arrived in Singapore, I thought that Spanish and Catalan food and culture was not pre dominant in Singapore and was happily surprised to learn that the dining scene is extremely vibrant and consumers here are extremely well educated in Mediterranean cuisine.

What is the similarities and differences between Catalan cuisine and Singaporean cuisine?

Similarities: both are use basic ingredients like vegetables, cereals, fish, meat, etc. and both cultures cook their food with love and passion!
Differences: the treatment and techniques used for cooking. In Catalunya, we produce almost everything that we eat.

What would be a perfect day in Singapore to you?

At the moment, everyday is almost perfect as I get to wake up every day and do what I love. I’m very lucky as not many people get to do something they love and I blessed for life.

Which market in Singapore is a must see for our readers?

We go to Tiong Bahru Market (30 Seng Poh Road), and sometimes to Tekka Market (665 Buffalo Road) as they are great places to find fresh produce, herbs and spices.

What can we expect next at FoodBar DaDa?

Expect new tapas creations to be added regularly onto the menu. Unique gastronomic features that is not available at any other Spanish restaurants. In addition, you may just find a few more FoodBar DaDas opening in Singapore.
